Recipe: Green Eggs & Ham Omelet

Inspired by the beloved children's classic, this fresh twist on green eggs and ham is easy to whip up and very customizable for the pickiest of eaters. Plus, it's a great way to sneak some veggies into your — and your kids'! — breakfast. So try this Green Eggs & Ham recipe, and you may just want to eat them here and there and anywhere!

 

YIELD: 1 omelet

Ingredients:

  • 2 packets Golden Aojiru Veggie Blend

  • 1 tbsp milk

  • 3 large eggs

  • Salt & pepper to taste

  • 1 tbsp unsalted butter

  • 1/2 cup freshly shredded cheddar cheese

  • 2 oz sliced ham, warmed

  • Optional tomatoes, sprouts, avocado

Instructions:

  1. In a small bowl, whisk Golden Aojiru Veggie Blend and milk until thoroughly mixed.

  2. Into a separate bowl, crack eggs, then add the Golden Aojiru mixture, salt, and pepper. Beat gently until mixed.

  3. In a frying pan over medium-low heat, melt butter, then add egg mixture.

  4. With a silicone spatula, quickly stir up the eggs in the center to let the uncooked eggs reach the bottom of the pan, then swirl the pan to let any uncooked egg form around the edges.

  5. When eggs are almost set but still wet, sprinkle cheese over half of the omelet, then layer warm ham slices over the cheese.

  6. Let cook for about 30 seconds, then slide omelet onto a plate while using the spatula to fold the plain side over on top of the ham-and-cheese side.

  7. Serve with optional tomatoes, sprouts, and avocado.

Tips:

  • Don't use prepackaged shredded cheese because it's harder to melt due to added starches.

  • Increase heat only as needed; a higher heat may result in rubbery eggs.

  • Pre-warm the ham in a microwave or separate frying pan to ensure a warm filling without overcooking the eggs.
